ENGLISH MINCE PIES
1 batch of pie pastry (your favorite from scratch or refrigerated pie crust)
1 cup dried currants (or dried figs)
1 cup chopped fresh apples
1 cup dried sultanas (or golden raisins)
1 cup dark raisins
1 cup candied citrus peel
1/3 cup sliced almonds
8 ounces brown sugar
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 cup brandy
Place all of the filling ingredients in the bowl of a food processor and pulse to chop. Line muffin tin with rounds of pie pastry. Fill with the fruit mince. Top with another round of pastry. Bake at 350 until golden.
